This dish looked as if it was a blast to make and from the recipe I'm certain it was beyond delicious! She used my Chipotle seasoning in both the beef she cooked as well as the tomatillo salsa. Brilliant!

I made a monster zucchini boat and sliced into "tacos" served with a tomatillo salsa. To make, core the center of a zucchini and bake face down in a baking dish with about an inch of water at 375*F for 15 min or until it softened but is still firm.

Meanwhile, I took @5280meat Ground Beef and cooked in ghee butter until brown. Then, I added @5280meat Pork Shoulder that I previously slow cooked and combined with the ground beef and @Flavorgod Seasonings Chipotle seasoning.

To make the tomatillo salsa, coat 10 tomatillos and a red onion in olive oil and roast in oven at 375*F for 15 min then let cool. Once cooled, add to Vitamix along with chopped cilantro, sea salt, pepper, lime juice and lime zest and blend until smooth. To assemble the boat, layer meat with Swiss cheese and bake until melted. Garnish with chopped peppers, cilantro, diced onion, and more @Flavorgod Seasonings Chipotle Seasoning and top with @5280meat bacon. Yum!!
