Everyone loves protein pancakes but sometimes protein powder doesn't sit too well with us! So here's my #veganfriendly spin on it! (No, I'm not vegan but there are days where I simply don't eat eggs, meat, fish or poultry - pretty much your main sources of protein). A little secret - you don't need anywhere near as much protein as you think and you don't need it in every meal. I don't have a clear schedule on when I do what. I eat intuitively and just wake up and go with my day and see how I feel throughout. Wasn't always like this but I feel 10000000 times better when I do.

Ingredients:
1/3 c coconut flour
1/3 c ground flaxseed (you can also use oats)
2/3 c almond milk
1/2 mashed banana
1/4 tsp baking soda
1Tbsp van extract
Optional: 2 packets of stevia
Toppings of choice - I used cinnamon and blueberries.

Directions:
1. Mix all ingredients together until smooth (or blend - you can dump them into your mixer)
2. Turn stove to med heat and spoon batter onto heated and greased skillet
3. Allow to cook until edges turn brown
4. Flip and cook for 30sec more!
5. Top with whatever (well maybe not WHATEVER ?) you'd like and enjoy!
