Back in the dry cure room @gwenla This side houses all of our whole muscle cures.
Culatello, fiocco, prosciutto, coppa, lardo, bresaola, speck….. Just to name a few. After we salt cure the raw cuts, they hang here for months, sometimes years to dry to perfection ??? #FRTakeover #charcuterie #curedmeat
