@andrewscrivani photographed the remains of @clarkbar’s recipe for malted milk fudge ripple ice cream, an ultra-creamy treat. The chocolaty, malty flavors are churned into a satiny ice cream veined with fudge sauce to create gooey, bittersweet ripples. Like the soda fountain drink that inspired it, the main source of malt flavor for the ice cream is malted milk powder. But because malted milk powder is made with heaps of sugar, there’s only so much one can add. To achieve the most intense flavor, find some barley malt syrup (available in health food stores), which deepens the malted milk powder whisked into the ice cream base.
