Here comes the best part of Thanksgiving: the #leftovers. These remains of the day are an invitation to tinker and experiment. “Every year I struggle with the turkey,” said @chefeinat, who closes her restaurants for the day and hosts #Thanksgiving at home. “I like the idea of leftovers because now you can add in lots more flavor and moisture, and make it seriously tasty.” Leftover turkey can be repurposed into many new dishes, like the turkey pav photographed here by @andrewscrivani. This dish was inspired in equal measures by a cluttered refrigerator and the #pavbhaji of western India — a gloriously spiced mash of vegetables served with buttery, toasted buns.
