Vacuum brewing is a coffee brewing technique that a lot of people of never seen. It creates a vacuum using steam that sucks the brewed coffee through a filter resulting in a really clean cup. Making coffee this way is like meditation - when you have mastered the art of stirring the coffee perfectly, it makes a little volcano cone shape. It took me more than 50 tries to do it the first time! Before I had kids, this was my morning ritual, now it is an occasional special treat and the kids help.
