Monday: Soufflé Corn Pancakes with cheddar, some fresh guacamole made in my molecajete that I bought back from Mexico ??

I very rarely follow or write down a recipe, it’s just not in my nature as a cook. All pancake batters are pretty much the same. Flour, egg, milk and maybe a raising agent plus a pinch of salt, but the same recipe in a different kitchen with a different chef can work or fail for so many reasons ??‍♀️ For these pancakes I used half regular flour and half yellow cornmeal, I split the eggs and whisked the whites to stiff peaks, added cheddar and some extra baking powder for lift. I also added some dried garlic, smoky Tabasco and topped with toasted nuts. The basic recipe is the same but with some twists and turns and voila! Something new!
