Monday Food Challenge ? It is so essential that our meals are diverse and provide a variety of different nutrients. It can be easy to fall back on 4/5 staple recipes you make (I definitely do this!) but in the long term this can mean you miss out on vital nutrients! Plus, more diverse plant foods means a more diverse gut microbiome and can be beneficial to gut health ✅ This week I challenge you to incorporate one new veggie, fruit or wholefood into your diet ? Here’s a few ideas of how: ➡️ Toast seeds or nuts and sprinkle them over a meal ➡️ Pick up a different variety of beans or legumes instead of the usual black beans, red kidney or chickpeas. Pop them in a curry. ➡️ Buy a new vegetable you haven’t cooked with before and search a basic recipe using it or just throw it into a stew! ➡️ Buy a new fruit, such as a different berry, and add it to your smoothie or porridge ➡️ Check out the seasonal fruits and veggies as these will be the most yummy and locally sourced. Eating more seasonably naturally means your diet changes every few weeks or months as new plants are harvested? These are just a handful of ways to add more diversity of plants into your diet! One new item I recently added into my meals was plum tomatoes. I’ve always hated tomatoes (even though my dad grows them for a living!). I don’t like them raw but I found softening them in a pan with salt and black mustard seeds makes them so delicious ?
