Ingredients:
4 oz. spinach, cleaned
2 oz. water chestnut, cut into small pieces
4 slices bacon, cooked, cut into small pieces
2 whole eggs, hard-boiled, removed shell, cut into small pieces
2 oz. red onion, thinly sliced

Seasoning:
2 Tbsp. olive oil (plum sauce dressing)
4 tsp. lime juice (plum sauce dressing)
4 Tbsp. pineapple juice (plum sauce dressing)
2 tsp. ginger, finely minced (plum sauce dressing)
4 Tbsp. Lee Kum Kee Plum Sauce (plum sauce dressing)
1 pinch black pepper, for taste (plum sauce dressing)

How to make it:
Combine all ingredients in a mixing bowl. Refrigerate for 30 minutes.
Drizzle plum sauce dressing over baby spinach. Serve.
