Meal prep Monday! After a busy weekend I’ve started the week by checking what fresh vegetables are left over in my fridge to cook for this weeks vegan mealprep - leeks, broccoli, courgette, ginger, garlic and onion yummm! Made up with brown rice, vegetable stock and a spoon of coconut oil this is the perfect base for this weeks meals to suit my busy schedule. Here I’ve served a portion up for lunch with a handful of salad leaves, for dinner I can add some spiced chickpeas and asparagus or with a scoop of veggie chilli as a side.
