barbromoerk @nigellalawson I would like to bake this cake with spelt flour (a friend with IBS...). Du you think it will turn out ok? Any other changes I ought to make to the original recipe for it to be successfull? Loved the canded ginger touch.... 👍

nunu_fakhry Thank you for sharing this recipe, i made it again yesterday! It's the best carrot cake recipe I've ever made and it's a hit every time. I do drop the ginger though, just not a fan!
