Risotto al ragù
The last time Risotto Bolognese (an erroneous tag, I know, for what’s essentially a meat sauce risotto/risotto al ragù) was #recipeoftheday, half the Italians on my timeline furiously declared it un-Italian; the other half said their grandmothers used to make it. Make of that what you will. I can vouch it’s very good. And I chose it right now particularly with those in the Southern Hemisphere in mind.

Probably it’s not typical of Bologna but all over Italy a similar kind of risotto was very popular. Instead of a real ragù, a sauce made of tomatoes and meat and chicken leftovers (liver, crests, wattles) was used.

I’ll definitely try this recipe! Here in Brazil it’s cold and perfect for a steaming hot risotto! Oh, by the way, thanks for the clarification on how to find the recipe. ???

Got to be honest, when I saw the email this morning for this recipe I thought Nigella's lost it, risotto what?! But this actually looks good...

Nella mia famiglia il riso si cuoce nel sugo di pomodoro e verso fine cottura si aggiunge mozzarella a dadini e tanto parmigiano grattugiato!

In Iraq we cook rice with red sauce like this and call it red rice. But it can’t be runny like risotto it has to b fluffy and separated
