Risotto al ragù
The last time Risotto Bolognese (an erroneous tag, I know, for what’s essentially a meat sauce risotto/risotto al ragù) was #recipeoftheday, half the Italians on my timeline furiously declared it un-Italian; the other half said their grandmothers used to make it. Make of that what you will. I can vouch it’s very good. And I chose it right now particularly with those in the Southern Hemisphere in mind.

fabrizio57 Probably it’s not typical of Bologna but all over Italy a similar kind of risotto was very popular. Instead of a real ragù, a sauce made of tomatoes and meat and chicken leftovers (liver, crests, wattles) was used.
