Courgette salad. Long strips with a speed peeler, fresh basil leaves, lemon zest, squeeze lemon juice, olive oil and a sprinkle if toasted pine nuts then thin strips of parmesan 😋

We always have so many growing in the garden. I recently tried zucchini pickles, they are great! However my little ones favorite is zucchini bread. He loves to help me bake it 😊

A Favourite!! In Canada (the east coast) they grow sooo well- I make chocolate cake, soup, fried, stuffed, raw for dip, bbq on skewers with meat- 1000 recipes!! 😍 so versatile!
