I got an amazing box of super fresh veggies straight from @terrafreshfoods farm to my table. They have high quality, gourmet, exotic produce. Check them out if you want to make a similar recipe!
INGREDIENTS
1. About 2 pounds rainbow or regular carrots, peeled.
2. Olive Oil
3. Maple Syrup
4. 1 tbsp melted butter
5. 1 tbsp garlic
6. Salt & Pepper
7. 1 tbsp brown sugar or honey
8. Goat cheese crumbles
9. Roasted Pistachios
10. Walnuts
11. Red pepper flakes (optional)

INSTRUCTIONS:
1. Preheat oven to 375 degrees Fahrenheit
2. Wash and peel your carrots so they are long and thin. Place them on a large baking sheet, drizzle with olive oil, maple syrup, butter, and top with garlic. Skip on the butter for a healthier version. Roast carrots for 35-45 minutes until fork tender.
3. Remove from oven and top carrots with walnuts, goat cheese crumbles, and pistachios. Feel free to get creative here! You can also use chopped almonds, sesame seeds, pomegranate seeds, and even chopped bacon, yum!
4. Drizzle with some more maple syrup and WAA LAA! I sprinkled some red pepper flakes on mine because I love the combination of sweet & spicy.
