It's inspired by a pineapple upside down cake that Master Distiller Dr. Bill Lumsden's daughter made for him for his birthday, and is very interestingly aged in Tokaji wine casks, giving it a fragrant subtle note of something I know pretty well: cake! To celebrate its debut (and Dr. Bill and my favorite fruit), I've created this Layered Pineapple Cake, with mini slices of almond cake soaked in passion fruit whisky syrup, layered with caramelized fresh pineapple and silky brown sugar ganache.
