People always ask me: what’s your favorite pastry? You might think it’s hard to choose with all the desserts we make each day, but my answer will always be the DKA (Dominique’s Kouign Amann). It’s my version of the classic Breton pastry, with a lighter and airier texture that’s not as dense as a traditional kouign amann. Think of it as a caramelized croissant, with flaky tender layers on the inside and a golden caramelized crust on the outside.
