After YEARS of listening to my best friend rave about congee after his trip to Singapore - I finally made it!! Congee is basically a savory thick rice porridge that’s served for breakfast that you can jazz up with any number of toppings and thanks to my @instantpotofficial Duo Crisp + Air Fryer it comes together in NO TIME FLAT! (Ok like 20ish minutes but still - pretty quick!) Serve it up with some air-fried mushrooms and other toppings of your choice and you’re in business!! And yes, you can pressure cook and air fry in the SAME MACHINE as it has 11 functions wrapped into one! It’s been a godsend through our home renovation, and I am here for it!! For the Congee:
1/2 cup basmati rice
4 cups chicken stock
Kosher salt to taste
2 large eggs, fried
1 avocado, peeled and sliced
4 scallions, thinly sliced
Chile oil, for serving
1 cup air fried mushrooms

For the Air Fried Mushrooms:
10-12 shiitake mushrooms, thinly sliced
1 tablespoon olive oil

Combine the rice, stock and salt in the inner pot of the Instant Pot. Pressure cook on high pressure for 15 minutes, then let the pressure release naturally for 10 minutes before removing the lid and transferring equal amounts of the rice mixture into 2 bowls. Top each bowl with a fried egg, sliced avocado, scallions and air fried mushrooms. Drizzle with the chile oil and sprinkle with salt and serve immediately.

To make the Air Fried Mushrooms:
Place the sliced mushrooms in the air fryer basket of the Instant Pot with 1 tablespoon of olive oil. Turn the Instant Pot to air fry and fry for 10 minutes at 400 degrees, stirring once through the process. Season with salt before serving.
