Have you cooked with shiitake?

Log-grown shiitake have a strong umami.🍄🪵

This 100-year-old farm has around 35,000 logs growing this flavor packed mushroom.

So they keep longer, most will be dried.
If done soon after harvest, the shiitake will retain their flavor as drying produces an umami compound called guanylic acid.
When rehydrated, the shiitake contain ten times the umami as when fresh.😋
