It's a mix of veggies + fruit + protein + healthy fat that makes for the perfect lunch or dinner! - CUCUMBER STRAWBERRY SALAD | Serves 1 - INGREDIENTS: 2 cups spinach 1 cup strawberries, sliced 1/2 cup cucumber, sliced 1/2 avocado, sliced 1/4 cup sliced almonds 2 tablespoons full-fat coconut milk 1 tablespoon olive oil 1 tablespoon fresh lemon juice 1 tablespoon fresh basil, thinly sliced 1/2 teaspoon maple syrup Pinch sea salt Pinch black pepper - DIRECTIONS: 1. Place spinach, strawberries, cucumber, avocado, and sliced almonds in a shallow bowl. 2. Combine the dressing ingredients and whisk well. Add salt + pepper to taste. 3. Drizzle over salad. CUCUMBER STRAWBERRY SALAD | Serves 1

INGREDIENTS:
2 cups spinach
1 cup strawberries, sliced
1/2 cup cucumber, sliced
1/2 avocado, sliced
1/4 cup sliced almonds
2 tablespoons full-fat coconut milk
1 tablespoon olive oil
1 tablespoon fresh lemon juice
