The ever-blue fruit (Pollia condensate) puts blueberries to shame.
Long after the green pigment molecules in its leaves have broken down, Pollia condensata’s iridescent fruit remains one of the most vibrant, intense shades of blue in nature. That’s because its blue is a structural color—the physical properties of its surface reflect light within the blue spectrum.
While this color may surround us, not all blues are made the same. Structural colors, pigments, and atomic elements give plants, animals, and minerals their intense shades of blue.
