Healthy, quick and simple lunch box ideas for the kiddos (or for yourself)!

1. Homemade granola, plain Greek yogurt (on the side), hard boiled egg, fresh fruit salad.

2. Carrot and bell pepper sticks, homemade protein chocolate black bean muffin, trail mix (in this mix -almonds, pumpkin seeds, dried apricots, raisins, pretzel thins and Cheerios).

3. Mini whole grain pancakes, fresh blueberries, hard boiled egg, apple slices.

4. Whole grain pita bread, grapes. Greek couscous salad (Cook 10 ounce package couscous according to package directions. Let cool. Whisk together 1/4 cup olive oil, 3 tablespoons lemon juice, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir into couscous. Stir in halved cherry tomatoes, halved pitted kalamata olives, chickpeas and feta. Salad will last for up to 3 days in the refrigerator.)

5. Hummus and veggie pitas with thinly sliced cucumber, carrot and bell pepper, mini banana muffin, strawberries and blueberries.
