I eat a lot of chicken so I love to try different recipes to spice it up and keep it interesting. This is a delicious alternative to regular chicken breast! .
Asparagus Stuffed Chicken Breast

Ingredients:

- Chicken Breast
- 1 Tablespoon Olive Oil
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Salt
- 1 Grated Cup Mozzarella
- 16 Spears Asparagus
- Bacon
- 1/2 teaspoon Garlic Powder

Instructions: .
1) Preheat oven to 375 degrees
2) Spray a baking tray with non-stick spray
3) Place chicken on a cutting board and use a sharp knife to butterfly the chicken
4) Drizzle the outside of the chicken with olive oil
5) Mix together the garlic powder, paprika and salt
6) Sprinkle mix over each chicken breast
7) Open up the chicken breasts and stuff with mozzarella (I used Goat Feta instead)
8) Put asparagus on top of cheese
9) Close the chicken breast
10) Lay bacon on top of chicken breast, making sure to tuck ends inside of chicken (I skipped this step)
11) Bake for 35-40 minutes or until thermometer reads 165 degrees and juices run clear
12) Enjoy!
