株式会社WHEREが主催する「YAMAKITA MIKAN展」にて、高知県の山北みかんを使ったお料理を提供させていただきました。甘みはもちろん、しっかりとした酸味もあり、味の濃さが特徴の山北みかんを存分にゲストに味わっていただけるよう、サラダからデザートまで、すべて山北みかんを使ったお料理に。

「山北みかんのカプレーゼ」は、カマンベールと山北みかんの組み合わせに、みかんバターを練りこんで作ったクルトンを。
カラフルに散りばめられている少し変わった形のミニトマトの中には、カプレーゼをより味わい深くしてくれるジュレが…♪
