Lunch for Day 1 No Sugar Challenge!

This chickpea mash veggie sandwich is one of my favorite lunch recipes. It’s easy to make and has a good amount of protein from the chickpeas!

I normally make a mash with the whole can of chickpeas and store the left over mash that I don’t use on the toast the fridge. This way later in the week when I need something quick and easy I can use this!
