Make dinner under 20 minutes with me! Summer is around the corner which means I love making my delicious poke bowls. It’s quick, easy and nutritious as you can make this with a variety of ingredients.

Salmon Poke
- 2oz sashimi grade salmon ( I bought mine at Japanese grocery store)
- Salmon marinade ( 1 tbsp soy sauce, 1tbsp rice vinegar, 1 tsp sesame oil , 1 inch grated ginger )
- 1 radish
- 1/2 avocado
- 1/4 cup fresh mango diced
- 1/4 cup cooked edamame beans
- 1 green onion stalk
- 1 tbsp sesame seeds
- 1 cup cooked white rice

1. Prepare the rice according package
2. Dice the salmon in small cubes and add to a bowl with all marinade ingredients and put in fridge. ( for optimal flavor but in fridge for at least few hours)
3. Slice radish, cut mango and cook edamame beans.
4. Add rice to bowl, add fish, sliced vegetables & top with green onions & sesame seeds
