A high protein packed cheesecake that taste like dessert:

This recipe is specially for my girls who love a sweet breakfast in the morning but want to get their protein take in. Made with all savory ingredients this recipe is going to blow your mind. With 48 (!!) grams of protein it’s the perfect breakfast to start your day. ( or eat it as a snack!)

Cheesecake Ingredients:
⁃ 3/4 cup cottage cheese
⁃ 1 scoop @ritual vanilla protein powder
⁃ 1 tsp maple syrup
⁃ 1 egg
⁃ Pinch of salt
⁃ Coconut oil or butter for ramekin

Blueberry Jam:
⁃ 1/2 cup frozen blueberries or raspberries
⁃ 2 tbsp chia seeds

1. In a skillet add frozen blueberries and cook for 2 minutes until soft. Then add chiaseed and stir together. Add into a jar in the fridge so the chiaseed absorbs all the liquid and becomes a jam texture.
2. Add all the cheesecake ingredients to a small food processor and blend until smooth.
3. Add your choice of oil/butter to the ramekin so the batter doesn’t stick.
4. Add the cheesecake mixture to the ramekin and bake for 12 minutes on 375F in airfryer ( or 25 minutes on 350F in oven)
5. Let it cool down and add the chiaseed jam on top
6. Ready to serve!
