Stuffed Lotus Root
Servings : 8

INGREDIENTS

Filling
5 inches lotus root, peeled
200 grams ground pork
1 teaspoon sake
A pinch of salt
Pepper, to taste
10 leaves shiso, chopped
1 teaspoon ground ginger
1 tablespoon cornstarch

Cornstarch, to cover

Batter
3 tablespoons flour
3 tablespoons cornstarch
60 milliliters cold water

Sauce
150 milliliters water
1 tablespoon sugar
1 tablespoon sake
1 tablespoon mirin
2 tablespoon soy sauce
60 milliliters cornstarch slurry

Garnish
Green onion

PREPARATION
1. Slice the lotus root into a 0.3-inch thick slice and expose it to water.
2. For the filling, combine ground pork, sake, salt, and pepper. Mix them very well in a bowl.
3. Add shiso, ginger, and cornstarch. Mix them very well.
4. Remove the lotus from bowl and dry excess moisture with kitchen roll.
5. Cover one side with cornstarch and place a tablespoon of the pork on top and spread evenly.
6. Place another slice of lotus over the top. Set aside.
7. For batter, mix flour and cornstarch in a bowl.
8. Add cold water, mix very well.
9. In a large high-sided pan, heat oil over medium-high heat until it reaches 340°F (170˚C).
10. Dip your lotus sandwich in the batter and carefully place into the oil.
11. Fry until golden brown and the filling is cooked through. Drain on a paper towel-lined plate.
12. For the sauce add water, sugar, sake, mirin, and soy sauce to a pan over a medium heat and stir.
13. Once the mixture has been brought to a boil add the cornstarch slurry, stir and cook for another 2 minutes.
14. Pour starchy sauce on fried lotus root.
15. Top with green onion and enjoy!
