Who’s eaten somen?🍜🙋

These super-thin noodles are made from flour, salt water and a bit of cooking oil, in a process handed down for centuries.👴⌛🧒🏻

Different types are based on thickness but to qualify to be called “somen” they must be under 1.3mm thick.📏

Over 2 days in the cold dry mid-winter months, the dough is twisted and pulled to strengthen the noodle fibers so they don’t break when stretched.💪😮
