Executive chef Micah Willix of Ecco Restaurant in Atlanta is one of those people. A few years back, Micah decided to compost all the food waste from his restaurant. At first he did it himself, but eventually found a facility north of the city to do it for him. He then uses the compost for a garden on the roof of the restaurant. The fresh herbs and cucumbers are harvested and used as ingredients for the menu. He even collects water from the air conditioning for irrigation. If you go to Ecco (highly recommended for the tasty and healthy food), you will see that Micah is an extremely busy person constantly in motion working with a whole crew of sous chefs. But still he has found the time to do something beneficial for the environment.
