Spaghetti squash and homemade pesto sauce ? Oh dear God we have a low carb, pasta craving satisfier. Recipe: poke the spaghetti squash so it doesn't explode in your oven and bake for one hour at 375 degrees F. Take out & let cool. Then, with a fork, shred the contents of the squash into a bowl, it will look like spaghetti.
Pesto sauce: Combine 1 3/4 cups of fresh basil, 2/3 cup of olive oil, 1/4 cup of pine nuts, one garlic clove, 1/2 cup of pecorino or Parmesan cheese, and salt and pepper to taste in a food processor and blend until desired consistency. ***Basil is an awesome nutrient packed herb. It has tons of antioxidants, has been shown to boost the immune system as well as promote healthy heart and GI functions, and can help with acne, dry skin and psoriasis.
