バングラディッシュ
-ストリートチルドレン,初の映画上映,レストラン開業-

バングラディッシュでのお店が焼き鳥屋さんだったことから、
メインにはシェフ流の鳥料理をご用意。
使用した鶏は、フランス語で「黒い鶏」を意味する「プレノワール」。

胸肉とモモ肉は、バナナの葉で蒸し焼きにし、
捨てられることの多い内臓系のハツ、レバーなどは銀杏と共に炭焼きにして、串焼きでご用意しました。
現地の焼き鳥屋さんを想像した、シェフの遊び心です。
ソースは鶏の骨からも取った鶏のジュ、のソースで、
鶏一羽を無駄にすることなく丸ごと使った、モッタイナイ精神の一皿です。

バングラディッシュらしさを表現したく、
現地でよく食べられている芋と豆を付け合わせとしてご用意。
燻製したインカのめざめのピューレと、
キチェリという、バングラディッシュの豆を使ったお粥をイメージしたリゾットを添えて。

お料理、全てに通じることですが、
お出ししたのは現地のお料理を再現するのではなく、
フレンチ出身のシェフが、解釈した上で構成したお料理。
「関根さんが映画で世界に興味を持ってもらうのならば、
私は料理でバングラディッシュに、世界に興味を持ってもらいたい」
という想いのもと、作られたお料理です。

【Main】
“Bangla Douche” - the story of “Street children”, “First movie screening”and “Restaurant opening”.

As the restaurant that opened in Bangladesh was a yakitori restaurant, we prepared chef-style bird dishes as the main dish.
The breast meat and thigh meat are steamed with banana leaves, and the often-discarded viscera such as hearts and liver are charcoal-grilled with ginkgo and prepared on a skewer.
It is a chef's playfulness imagining a local yakitori restaurant.
A chicken sauce from chicken bones, this is a plate of the MOTTAINAI spirit that uses a whole chicken without wasting it.

Although it is familiar to all dishes, what we served was not a reproduction of the local cuisine, but a dish prepared by a French chef after interpreting the story.
It is a dish that was created with the idea that “If Sekine-san makes you interested in the world through movies, I would like to make Bangladesh and the world interested in cooking”.
