On busy days, I will usually make something quick - like this 15-minute pasta!   You can really make this pasta with whatever you have in your fridge, freezer, or pantry - you just need a couple of staple ingredients. As long as you have pasta, some protein (such as chicken, tuna, chickpeas, or tofu) and some vegetables, then you're good to go!  This is how you make it:  ✅ Boil your choice of pasta in salted water and drain once cooked. ✅ In a pan, heat some olive oil, then add your choice of protein and veggies and cook through. I might add chicken, a jar of my grandparent's homemade tomato passata (which is like tomato puree - swipe across to see how many bottles of passata we made last year!), and whatever vegetables I have in the fridge, like roasted capsicum (peppers), spinach and tomatoes.  ✅ Add the cooked pasta to the pan with some pasta water and season with herbs and spices.
