If you have the opportunity to buy your eggs directly from a small farmer or at a farmers market, you will see the difference. The shells are rock hard and difficult to break. Sometimes you even see an orange yolk because they are so full of nutrients.  Eggs are a fantastically healthy food, as long as you are not sensitive to them. Lots of people have egg sensitivities they don’t know about.   The healthiest part of the egg is the yolk, and the healthiest way to eat the yolk is raw or very gently cooked. When you cook the yolk until it is hard, you oxidize the cholesterol and denature some of the proteins.  On the other hand, egg whites are a relatively low-quality protein source, and you want to cook those because raw egg whites deplete biotin and are harder to digest.  One of my favorite hacks, something I wrote about in the Bulletproof Diet book, is adding raw egg yolks to Bulletproof coffee while it is blending.  Sounds gross, right? It’s not. Think about it. Ice cream is milk fat (butter!) mixed with egg yolks and sugar.  Obviously you don’t want to put sugar in yours, but you can use Stevia or Monk fruit. That makes your coffee taste more like melted ice cream. It is delicious.  If you add eggs to your coffee, you’re not intermittent fasting. Any protein or carbohydrates in your coffee will break a fast.
