Strawberry Cheesecake with 45g of protein! This high protein breakfast recipe is one of my new favorites. It can be challenging to get enough protein in a sweet breakfast dish but this recipe fulfills both! There is no added refined sugars and just taste like a dessert. 🍓
Ingredients:
⁃ 1/2 cup cottage cheese
⁃ 1 egg
⁃ 1/4 cup greek yoghurt
⁃ 1 tsp vanilla extract
⁃ 1 tbsp maple syrup
⁃ 1 scoop vanilla @ritual protein powder
⁃ 1/4 cup fresh strawberries
⁃ Coconut oil or butter for ramekin
Strawberry Jam:
⁃ 1/2 cup frozen strawberries
⁃ 1.5 tbsp chia seeds
⁃ 1 tbsp maple syrup
Method:
1. In a skillet add frozen strawberries and cook for 2 minutes until soft. Then add chiaseed and stir together. Add into a jar in the fridge so the chiaseed absorbs all the liquid and becomes a jam texture.
2. Add all the cheesecake ingredients to a small food processor and blend until smooth.
3. Add your choice of oil/butter to the ramekin so the batter doesn’t stick.
4. Add the cheesecake mixture to the ramekin and bake for 12 minutes on 375F in airfryer ( or 25 minutes on 350F in oven)
5. Let it cool down and add the strawberry jam on top
6. Ready to serve!
