Come make dinner with me, this Middle Eastern style stuffed eggplant with cooked quinoa is such an easy and delicious dish! I have been experimenting a little more with beef into a few dinner recipes and this was one of my favorites. 🍆🍴

Middle Eastern style stuffed Eggplant:

( 2 servings)
Ingredients:

- 2 eggplant
- 1/4 cup fresh chopped parsley
- 1/4 cup pomegranate
- 2 cups cooked quinoa

Spiced Ground Beef:

- 1/2 lb minced grass fed beef
- 1 tbsp cumin
- 2 tsp coriander
- 1 tsp cinnamon
- 2 chopped tomatoes
- 1/2 tsp salt
- Ground pepper
- optional: /2 tsp cayenne pepper for extra spice
- 1/2 onion, finely chopped
- 2 garlic gloved, minced
- 1 tbsp olive oil

Yoghurt Lemon Dressing:
- 1/2 cup yoghurt
- Squeeze juice half lemon
- 1 tbsp lemon zest
- Pinch of salt
- Pinch of black Pepper
- 1 tbsp olive oil

1. Add eggplant to airfryer and bake for at least 30 minutes on 380F, flip half way trough. Until the eggplant is soft and tender. ( if you use oven - preheat oven on 340F/175C and bake for 1h)
2. In the meantime prepare the spiced ground beef. Chop the tomatoes, garlic and onion.
3. Add a frying pan on medium heat, add 1 tbsp olive oil and add onion and garlic and sautéed until soft.
4. Add the ground beef and break up any lumps. Add the spices and cook for about 8- 10 minutes until brown. Add the tomatoes and simmer for another 5 minutes. Season with salt & pepper
5. Grab your eggplant from the oven or airfryer and slice in the middle. Add the ground beef mixture in the eggplant and bake for another 8 minutes in the airfryer or 20 minutes in the oven.
6. Prepare the yoghurt lemon dressing by mixing all the ingredients.
7. To serve, add quinoa to a plate, add eggplant on top, add yoghurt lemon dressing, fresh parsley and pomegranate.
