Ingredients
1 cup almond meal
1⁄2 cup flaxseeds
2 tbs chia seeds
1⁄4 cup rice malt syrup
1⁄2 cup freshly squeezed orange juice
1⁄4 cup desiccated coconut 1 cup of blueberries Maple syrup to serve
Method
Crack the flaxseeds in a 1 second blitz using
a spice grinder. This means just break open their shell so that some might still be whole and some are a little ground. In a bowl mix the almond meal, chia seeds, flaxseeds, syrup, juice and coconut until well combined into a dough. Add the blueberries being careful not to squash them. Make little round balls from the dough and press them onto a lined piece of baking paper. Dehydrate for one hour and then flip to dry for a further hour. Serve warm with maple syrup and coconut yoghurt or just as they are.
