"Teishoku" is a simple meal that satisfies millions of workers and students across Japan day after day. It is usually a classic combination of rice, miso soup, vegetables, and a main dish of meat or fish. In 2018, Shintaro Nakamura, who’s been working at restaurants since his early 20s, decided the time had come to set up his own teishoku restaurant, Kyoto's Shokudo Marushin.
