Easter this year was indeed different. Since I haven’t been to the store to get jellybeans or Cadbury eggs, our backyard egg hunt had plastic eggs filled with couch change, Halls throat drops, dinner mints from various restaurants, and a brunch Zoom sesh with family. Although there may not have been hugs and kisses there were virtual hugs and quiches! 🤗 Well, one huge, honkin’ quiche really that could have fed an army of..I dunno..quiche lovers? Made quiche aux champignons 🍄, adapted from Thomas Keller. It had the right height, buttery flaky crust and custardy texture, all the elements one would expect from a proper quiche. With three different kinds of mushrooms sautéed with shallots and thyme, placed alternately with layers of Comté and cotija cheese (had to use what I had!), it was so good!
