#ad Honestly, I could eat a plain toasted English Muffin with butter all day, every day, but when @thomasbreakfast asked me to create something for their new recipe book to celebrate their 140th birthday, I knew I had to get a little more creative. Then I remembered my spinach, tomato and swiss scramble. I've been making them since college back when swiss cheese was the only cheese I would eat. It is the tastiest, most complete breakfast, especially after a big night out. If you had told me that one day my college hangover food would make it into a cookbook, I never would have believed you! I stand by my scramble and make it all the time. You need:

2 cups spinach

1/3 cup diced tomatoes

1 thin slice of lace swiss cheese

2 eggs

1 Thomas' English Muffin

Butter

Saute spinach and tomatoes with oil, add eggs and cheese. Scramble. Butter toasted Thomas’ English Muffin. Top with scramble and add salt and pepper to taste. Voila! You are done. #thomas140
