Baked Avocado with Cheese
Servings: 2
 
INGREDIENTS
1 avocado
A
4 cherry tomatoes (cut into quarters)
1 slice bacon (cut into 1cm pieces)
2 tablespoons mayonnaise
1 tablespoon grated parmesan
Black pepper, as needed
2 porched eggs (or soft boiled eggs)
Parsley, as needed
 
PREPARATION
1. Rinse and cut the avocado into halves. Remove the pit. Scoop out the flesh.
2. Mix the avocado flesh (1) with all of the ingredients A in a bowl.
3. Place (2) in the avocado skin. Put some grated parmesan on top.
4. Place (3) on a baking tray lined with a foil. Bake in the toaster oven until golden.
Place the egg and add some black pepper and parsley on top.
5. Enjoy!
