Note: this recipe uses honey for the flavour as well as its sweetness. For a vegan or fructose free alternative substitute the honey for rice malt syrup. Also, you could make your own almond paste by blending 1 ½ cups of soaked cashews for 10 minutes in your food processor but it is much easier to buy a really high quality almond butter (my new favorite is the
Chocolate

Ingredients

1 cup cacao powder

½ cup coconut oil

½ cup cacao butter

½ cup rice malt syrup

1 tbs vanilla extract

a crackle of salt from the grinder

Method

Melt the oils and then combine all ingredients in a bowl or food processor and mix until smooth and glossy. Pour half the mixture into a loaf pan or a small lamington tray. Refrigerate until set. Make the fudge.
Banana fudge

Ingredients

1 ¼ cups of almond paste

½ cup coconut paste

¼ cup coconut oil melted

¼ cup rice malt syrup

¼ cup honey

2 bananas

½ tsp Himalayan salt

Method

Blend all ingredients in a food processor until very smooth. Smooth on to the top of the chocolate and then pour on the remaining chocolate sauce. Refrigerate until set.
