Blueberry Blondie with Vanilla Protein Whip - Ever since my friend @アリッサ・リンチ showed me her protein vanilla whip I had start experimenting with it. This delicious blondie is chewy, satisfying and protein packed from the almonds, eggs, greek yoghurt and vanilla protein!

Blueberry Blondie ( 12 servings)
1 1/2 cups Almond Flour
1/3 cup ( or more for extra sweetness) Coconut sugar
1/4 cup melted coconut oil
2 eggs
1 tsp vanilla
2 Tbsp almond milk
1/4 tsp Baking soda
Dash of salt
1/3 cup blueberries

Vanilla whip
- 1 cup greek yoghurt
- 1 scoop @ritual vanilla protein powder ( this only works well with protein powders that are a little sweetened)

1. Preheat the oven for 350F or 200C
2. Mix all ingredients in a blender exept the blueberries until smooth. Then add blueberries to the dough.
3. Add coconut oil to a baking form and add dough, bake for 25-30 minutes until golden brown.
4. In meantime whip up greek yoghurt and vanilla protein powder in a bowl. You can store it in the fridge.
5. Once the blondie is cooled down, add the vanilla whip on top and enjoy!

Tip: You can store the blueberry blonde for up to 5 days in the fridge in airtight container!
