On my family's small, organic farm on Vancouver Island, we are building soil. The fennel you see here is growing on soil that was part of a gravel pit. To restore life in the soil, we raised pigs on the land. They turned over the soil and fertilized it. The areas touched by the pigs are full of life, and you can see how the plants are struggling to grow where there have been no animals.

It is an unfortunate fantasy that we can somehow stop having animals in our ecosystem and live off plants. Plants don’t live without animals. Animals don’t live without plants.

The world has about 60 years worth of topsoil left according to the latest estimates. Industrial animal production destroys the soil. Vegan diets eliminate soil. What’s left? Regenerative agriculture, where animals and plants grow on the same farms, distributed as far as we can make it happen.

This is the only way I can find that allows for the number of people we have on the planet to thrive.

And yes, it requires bacon. Life is good!
