新横浜ラーメン博物館(ramen museum)さんのインスタグラム写真 - (新横浜ラーメン博物館(ramen museum)Instagram)「【ラー博クロニクル Vol.37】店主の中坪氏は、博多「一風堂」創業者･河原成美氏の一番弟子として、一風堂ラー博店初代店長などを歴任し、13年間の経験を積み、2001年に「麺の坊砦」を創業😎 「麺の坊砦」は女性客が6割と驚異的な高さの女性来店比率です。清潔な店内、広い化粧室に自由に使用できるアメニティーや髪止め用のゴム、先にミントを付けた爪楊枝、オリジナルの手作りスイーツと、来店されるお客様に居心地の良い時間を過ごしてもらいたいという店主の想いから結果的に女性比率の高いお店になったのだと思います。そして提供するラーメン＆サイドオーダーは一言で言うと「時間と手間」。豚頭のみを20時間、原形がなくなるまで丁寧にアクを取りながら煮込んだスープは、臭みが少なく、クリーミーで旨味が凝縮されています。チャーシューも2日間煮込み余分な脂を飛ばします。香りの高い海苔、農家直送の玉子も安心して、美味しく口にできる具材を選んでいます。人気の餃子も一つずつ時間をかけた手作りと、全てはお客様の満足のために手間を惜しまないという店主の考えです🙂 余談ですが、現在放送されているTBS「俺の家の話」でロバート秋山さんがオーナーを務めるラーメン店のロケ地としても利用されております😄 【店舗データ】「麺の坊砦」創業:2001年ラー博出店期間 2011年4月17日～2015年1月12日次回は「二代目げんこつ屋」さんです Ramen Museum Chronicle Vol.37 The owner, Mr. Nakatsubo, was the first apprentice of Mr. Shigemi Kawahara, the founder of Ippudo in Hakata, and worked as the first manager of Ippudo Ramen Museum. In 2001, he established Men no Bo Toride, which has an astonishingly high percentage of female customers at 60%. The clean interior, spacious restrooms, freely available amenities, hair elastics, toothpicks with mint tips, and original handmade sweets are all part of the owner's desire to make customers feel at home, and I believe this has resulted in the high percentage of female customers. In a word, the ramen and side orders that they offer are all about "time and effort. The soup is made by simmering only the head of the pig for 20 hours, carefully removing the scum until the original form is gone, and has little smell, creamy and concentrated flavor. The pork chashu is also simmered for two days to remove excess fat. The fragrant nori seaweed and eggs directly sent from farmers are also selected as ingredients that are safe and delicious to eat. The popular gyoza is also handmade one by one, and the owner believes that no effort should be spared to satisfy customers.
