Bacon Egg Fluffy Pancakes

INGREDIENTS
4 bacon slices (half size)
1 egg
1 tablespoon mayonnaise
30g flour (sifted)
2 eggs
10ml milk
10g sugar
1 teaspoon vegetable oil
2 cheese slices
Maple syrup, as needed
ㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤ
PREPARATION
1. Cook the bacon in a pan. Make them super crispy.
2. Mix the egg and mayonnaise in a heat-proof bowl. Microwave for 50 seconds at 600W.
3. Separate the eggs to whites and yolks. Mix the egg whites and sugar in a bowl to stiff peaks form. In another bowl, mix the egg yolks, flour, and milk. Add the whipped egg whites to the bowl (2 separate times).
4. Pour the half of the batter (3) into a lightly oiled pan. Place the bacon (1), the sliced cheese, and the eggs (2). Pour the rest of the batter on top. Cook for a few minutes with a lid on. Flip the pancake and cook for a few more minutes. Serve with the maple syrup.
