Zucchini banana bread 🍌

- high protein

This is by far my favorite recipe of my book Win In the Kitchen 📕 I ate the whole thing after making it 🫣😂

Every time I make this recipe it is gone in the same day and everyone I share it with goes for second and third serving!

✅Ingredients:
For the bread:
1 cup shredded zucchini
2 medium ripe bananas, mashed
3⁄4 cup cashew butter (or all natural peanut butter, almond butter, or tahini)
2 tbsp. pure maple syrup or honey
2 eggs
1 tsp. vanilla extract
1 scoop of protein powder (whey vanilla)
1⁄2 cup coconut flour
1⁄2 tsp. baking soda
1⁄2 tsp. ground cinnamon
1/3 cup chocolate chips
For the chocolate drizzle:
2 tbsp. chocolate chips 1 tsp. coconut oil

✅Preheat the oven to 350°F. Coat the inside of a 9-inch square baking pan with nonstick cooking spray, and line the bottom with parchment paper.

In a large bowl, mix together the zucchini, banana, cashew butter, maple syrup, eggs, and vanilla extract until smooth and well combined. Add the coconut flour, the protein powder, baking soda, and cinnamon and stir to combine, then fold in 1/3 cup of the chocolate chips. Pour the batter into the prepared pan. Bake for 30 to 40 minutes, until a toothpick comes out clean.

Meanwhile, in a small saucepan, combine the remaining 2 tablespoons of chocolate chips with the coconut oil. Place the pan over low heat and cook, stirring frequently, until the chocolate is melted. Drizzle the chocolate over the bread when it comes out of the oven.

Slice and serve!
